The fourth recipe in this blog series "Chinese Food on a Budget: 5 Family Meals for £16.50" is this Gammon and Cabbage Fried Rice. It only cost £2.19 to make the entire dish making it cheapest recipe in this series that will feed a young family of 4 and with leftovers too.

4 simple ingredients plus cooked rice (which I forgot to include in this picture). The gammon is £1.59 for 200g, another great value meat product.

Dice the gammon, onions and half head of cabbage. Crack the eggs into the bowl and whisk together.

Add 2 tbsp oil to the wok and on high heat, stir fry the onion and cabbage for 5 minutes, then push to one side and add in gammon.

Once the bacon is nicely seared, mix well together with the vegetables. Plate up and set aside.

Give the wok a quick rinse, turn heat on high to evaporate the water then add in 4 tbsp of oil. Throw in the cooked rice and break up any clumps you see, using the back of the spatula. Once rice is supple, make a well in the middle by pushing the rice to the sides and add in the 3 whisked eggs. Scramble the egg, bring the rice back to the centre and mix well with the egg. 

Now, add the meat and veg into the egg fried rice and mix until everything is incorporated. Add in sesame oil, light soy sauce and white pepper, and mix well. Take off heat and serve.

Dinner is served for our family of 4.

These were the leftovers we had which were saved for lunch the next day. 

Ingredients:
I pack of gammon (200g)
2 cups of cooked rice
2 onions 
Half head of cabbage
3 eggs
6 tbsp oil
1 tbsp sesame oil 
2 tbsp light soy sauce
1 tsp white pepper

Directions:
1) Dice the gammon, onions and half head of cabbage. Crack the eggs into the bowl and whisk together
2) Add 2 tbsp oil to the wok and on high heat, stir fry the onion and cabbage for 5 minutes, then push to one side and add in gammon
