The second recipe in this blog series "Chinese Food on a Budget: 5 Family Meals for £16.50" is this Bacon and Broccoli Stir Fry. It cost £3.06 to make, feeding a young family of 4 and with leftovers too. Rice is not included in the cost of this recipe, so you'll need to factor this in.

4 simple ingredients. Cooking bacon is the star of the show here, at 90p for 500g, there is so much of it to go around! Far cheaper than a regular pack of bacon.

Bring a pan of water to boil, add in broccoli and blanch for 5 mins. Pour away the hot water, rinse under cold running water and drain. Keep to one side.

Chop bacon into small cubes. If you don't like the fat, remove the fat before chopping.

Add 2 tbsp oil to a hot pan, keep pan on high heat and add in chopped bacon. A lot of water will come out from the bacon as it cooks.

Once bacon is cooked through, drain all the excess juice away and discard.

Fry onion and garlic until golden with 1 tbsp of oil, then add in the drained bacon. After 2-3 minute of stir-frying, put in the blanched broccoli and 2 cups of water. This may sound like a lot of water, but the bacon is salty and this much water is needed to tone down the salt levels and create a sauce.

Cook for a further 3-5 minutes until the broccoli is soft or to your liking. Make up a cornflour slurry by mixing cornflour and water together, then add the slurry into the broccoli and bacon and turn off heat. Serve with rice.

These were the leftovers we had which were saved for lunch the next day. 

Ingredients:
1 pack of cooking bacon (500g)
1 broccoli
3 onions
4 cloves of garlic
2 tbsp oyster sauce 
1 tbsp sesame oil 
1 tsp white pepper
2 tsp sugar 
2 tbsp oil
2 cups water
3 tbsp corn flour 
1/4 cup water (for cornflour slurry)

Directions:
