Dry Fry French Beans (without meat)

Dry fried french beans with minced pork in chilli bean sauce is a signature Sichuan dish and everyone makes it with a slight variation. I made a vegetarian version at the weekend, mainly because we had a lot of vegetables that needed to be cooked, and eating a vegetarian meal weekly/fortnightly feels like a nice way to detox without being deprived.

It's a simple 10 minute side dish and is tasty enough to have as a light mains with rice or noodles. I cooked this along with Japanese style enoki, stir fried lettuce in oyster sauce and boiled rice for a complete meal. The chilli bean sauce is full of umami and really livens up this veg dish.



Ingredients:
200g French/fine beans
3 cloves of garlic, minced
4 tsp oil
1 tsp chilli bean sauce
1 tsp light soya sauce
1 tsp oyster sauce
4 tbsp water

Directions:
1. Wash and trim the ends of the beans
2. Heat oil in a frying pan and add beans. Once the beans have been charred, dish up, or push to one side of the pan, and add garlic
3. Once the garlic is golden, mix well with green beans, and then add chilli bean sauce, soya, and oyster sauce
4. Add some water - it will sizzle the pan at this point. Let the water evaporate a little, then dish up. Serve immediately
